They created O&B Artisan, an in-house bakery and confections studio, working with some of Canada’s best artisan bakers, pastry chefs, and chocolatiers.
They produce specialty foods for O&B’s many restaurants and run a boutique shop at Hudson’s Bay Queen Street.

Their bakers are responsible for keeping ingredients fresh and tailoring recipes to the taste and preferences of their various fine dining restaurants.
Responsibilties
- Check the production schedule to determine the variety and quantity of goods to bake.
- Measure and mix ingredients to form dough or batter, following recipes.
- Place dough in pans, molds, or sheets, and bake in the oven.
- Observe products while cooking and adjust controls.
- Use various kitchen tools, including electric mixers, pans, rolling pins, and cutting tools.
- Monitor the baking process to identify needed adjustments.
- Handle and move ingredients, tools, and cooking pans.
- Control mixing processes and oven controls.
- Implement products by following recipes or creating new ones.
- Package products for storage or delivery using proper labeling and respect for product quality.
- May develop new recipes.
Qualifications
- Completed a Baker/Patisserie Apprentice Program and Baking and Pastry Arts Management program
- Knowledge of a wide range of ingredients.
- Knowledge of baking equipment and techniques.
- Knowledge of preventive measures for possible hazards – WHMIS.
- Must also be patient, detail-oriented, creative, and organized.
- Able to work well independently and as part of a team.
- Must be able to lift and carry 50lbs.
