Apex2100 International Ski Academy combines the highest standards of education, performance and alpine ski racing. Set in the French Alps, with its unrivalled location nestled in one of the largest ski domaines in the world, Tignes, France.The Apex 2100 International Ski Academy attracts the most talented young people in the world of skiing, and sports, to its state of the art facility. Apex2100 International Ski Academy is not a traditional school setting, and we are looking for open minded and forward-thinking individuals to join our dynamic team. We are looking for a highly motivated and flexible Catering manager who wants to be involved in a novel and ambitious project and play a role in the development of our young international athletes.

Role description:

As part of a team of 7 people (1 sous-chef, 3 chefs de partie, 2 plongeurs commis de cuisine), the catering manager ensures that all catering operations at the academy run smoothly, with regard to the needs of the athletes and staff, the budget, quality control, orders, supplies and health and safety.The academy has around 120 boarding students. The areas covered include the kitchen, canteen, camps, events, external groups, visitors and marketing.

– Work in the kitchen to prepare food and provide service (same responsibilities as the chef de partie)

– Drawing up balanced, non-repetitive menus

– Work with the external nutritionist to develop the nutritional needs of athletes and meet their expectations

– Development of menus or menu planning for any camp/race/external event (including a meal protocol that can be sent by the person contacting the hotels for the camps/races).

– Drafting of athlete and staff surveys and actions to improve the canteen experience

-Team management: Organisation of team schedules, development and monitoring of skills, discipline, recruitment, etc.

– Programming meal times for a number of different athletes and staff groups (skiing in particular) with multiple and varied requirements, in collaboration with the Train and Perform departments

– Budget management

– Managing stocks and orders, working with suppliers to obtain products and markets of the highest possible quality.

– Developing communication between all departments

– Ensure that an emergency plan is in place (e.g. snacks, packed lunches, etc.).

– Creation and/or updating of all documents relating to the kitchen and/or the Academy

– Ensure strict application of HACCP standards

– Full regulation of all catering equipment, food and supplies, including snacks and racing products

– Organising the departure and return of food and equipment to the academy

Qualifications and skills required:

– Good level of French and fluent English required

– Organised, rigorous and methodical

– Fast and efficient, able to meet deadlines

– Flexibility

– Resourcefulness and creativity, problem-solving skills

– Good interpersonal and team management skills

– Good administrative skills

– Versatility in the kitchen

– Knowledge of culinary production rules in the catering industry

– Knowledge of general and food hygiene and safety rules

– Knowledge of food stock management rules

– Knowledge of product storage, packaging and assembly rules

– Familiarity with dietetics and ergonomics

– Knowledge of the procedures and self-checks implemented as part of the HACCP method

Working conditions :

– Workplace: Tignes, Apex

– Full-time, permanent contract May – June 2024

– Salary: depending on the candidate’s profile and experience

– 1 meal per day worked provided (benefit in kind)
